Associate - Le Cordon Bleu Culinary Arts

Graduates with an Associate Degree are qualified for entry level and sometimes mid-level positions in just fifteen months (twelve months on campus and three months of an externship). Like all programs, this one combines traditional cooking techniques with innovative styles. Gain comprehensive knowledge of the food service industry, including:

  • sanitation
  • safety
  • hygiene
  • personnel management
  • cost control
  • table service systems
  • indentification of meats, fish, poultry
  • portioning of meats, fish, poultry

Associate - Le Cordon Bleu Patisserie and Baking

This is a rigorous program with a focus on baking techniques and innovative approaches to pastry. Graduates of Le Cordon Bleu Patisserie and Baking Program will earn an Associate of Applied Science degree and will be qualified for entry-level positions as bakers or pastry chef apprentices. There will be a focus on:

  • breads and doughs
  • cakes
  • pastry and desserts
  • chocolate and confectionery
  • show pieces

Students will also learn about both front of the house and back of the house management and attend courses on sanitation and safety procedures, nutrition and personnel management.

Associate - Le Cordon Bleu Hospitality & Restaurant Management

This program is designed to give students the background necessary to secure a job as hospitality professional. This is an increasingly popular field so employers are especially eager to find qualified, reliable, and competent workers. In this program you will lean about the front and back of the house operations and focus on the following subjects:

  • basic culinary arts training
  • hotel operations
  • restaurant management
  • accounting
  • small business management
  • wine studies
  • professional communications
  • human resource management
  • mixology/beverage service

This intensive nine-week course requires an externship as well where all students will receive hands-on work experience.
